tenforwardGeoduck from Canada is one of the most unique seafood delicacies from the cool, pristine waters of Canada’s Pacific coast.  It is graphically dubbed elephant trunk clam in Chinese for its long meaty siphon or neck extending from its large, oval shaped shell.  Known as geoduck (gooy-duck) in North Ameerica – derived from the Washington State Nisqually First Nations word gwe-duk meaning “dig-deep” – it is the longest-lived and largest burrowing clam in the world.  It can bury itself up to one meter deep in the ocean floor.

 

 

diver_w_hose2 Geoduck are individually harvested one at a time by divers using a directed water jet called a “stinger” which loosens the substrate around the clams and allows them to be carefully lifted out of the sand in top condition.
